besides brushing up on 2010 Publisger functionality, I was looking for some tips on creating some common small business forms such as estimate sheets, proposals in a construction business. That's not really there but too be honest I'm not sure it should be in an intro style course.

It would be better if the instructor would "show" not just "tell". For example, he says, "well, if you want to do this, just click here" very often - and then never does it, so the student can't see the actual effects of those actions.
